[php] Umlaute

Hallo

Folgendes Problem: Nach ausfüllen des Formulares verschicke ich ein
Bestätigungsmail. Komischerweise werden die Umlaute im Mail nicht richtig
dargestellt - ein Problem, dass ich noch nie hatte!

Die Files sind so aufgebaut:
index.php - Formularcheck und wenn gut, Mailbefehl, include je nach
Stand, leeres Formular oder Dankestext.

Hat jemand eine Ahnung woran es liegen könnte?
